Sweet Potato Rice

Ingredients
  • 1cup onionpeeled and diced
  • 1/4 – 1/2 cup vegetable broth or waterto stir fry the onion
  • 1cup grated sweet potato
  • 1cup brown ricerinsed
  • 1.5cups vegetable broth or waterto add with the rice.
  • 1 tbsp coconut oiloptional
  • to taste salt and pepper
Instructions
Onion
  1. Peel and dice one medium sized onion, enough to make one cup.
  2. In a medium size saucepan, place 1/4 cup or so of vegetable broth (or water) and add diced onion.
  3. Cook over medium heat for about ten minutes, stirring often until the onions are translucent.
  4. Add veggie broth or water as needed to prevent onions from sticking.
Sweet Potato
  1. Grate 1/2 medium sweet potato until you have filled a one cup measure.
  2. Do not pack down.
  3. Add sweet potato to cooked onion and stir lightly to combine.
Rice
  1. Place rice in a fine mesh sieve and rinse under running water for one minute or so.
  2. Add rice to onion and sweet potato mixture and stir to combine.
  3. Add 1.5 cups of veggie broth or water to rice mixture and bring to a boil.
  4. Cover, turn heat down to low and simmer rice until all the liquid is absorbed.
  5. Remove from heat and let sit covered for ten minutes.
  6. Fluff gently with a fork and add coconut oil is desired.
  7. Add salt and pepper to taste.
Recipe Notes

Delicious as a side paired with a veggie loaf or some bean dip and a vegetable (raw or cooked).

Turn the rice into a main by adding some beans or plant based sausage.

Add herbs and/or spices as desired.
